The recipe for Doenjang Jjigae (Korean soybean paste stew) is as follows:
Ingredients:
- 2 tablespoons of doenjang (Korean soybean paste)
- 1/2 onion, sliced
- 2 cloves of garlic, minced
- 1/2 zucchini, sliced
- 1/2 potato, cubed
- 1/4 cup of sliced mushrooms
- 1 green chili pepper, sliced
- 2 cups of water or anchovy-kelp broth
- Tofu (optional)
- Scallions (optional)
Directions:
1. In a pot, sauté the sliced onion and minced garlic until fragrant.
2. Add the sliced zucchini, cubed potato, sliced mushrooms, and sliced green chili pepper to the pot and stir-fry for a few minutes.
3. Add 2 tablespoons of doenjang to the pot and stir well.
4. Pour in 2 cups of water or anchovy-kelp broth and bring it to a boil.
5. Reduce the heat and let it simmer for about 10-15 minutes until the vegetables are fully cooked.
6. Add tofu (optional) and scallions (optional) to the pot.
